This past weekend was so fun! Two of my friends from Georgia came out to California to vacation. Matt and I showed them all the beautiful things to see around Humboldt County. I love the fact that we can be dancing in the Redwoods one minute and just a little while longer, be playing on the beach. Great friends, good food and amazing views all make up fantastic memories!
After a really long day out sightseeing we wanted something quick and hardy to eat. So, my friend Jenifer shared this awesomely quick and easy Baked Ziti recipe with me:
Jenifer’s Baked Ziti
- 1 lb tubular pasta (we used rigatoni)
- 1 24oz. jar of your favorite pasta sauce
- 1 15oz. tub of ricotta cheese
- 2 cups shredded mozzarella cheese (reserve a handful for the top)
- Crackers and dots of butter for the top (optional)
Preheat the oven to 350°
Bring a large pot of water to a boil. Add a little handful of kosher salt or sea salt to the water before adding the pasta. Boil the pasta about 7 min (a little less time than the package suggests, the pasta will finish cooking in the oven). Drain pasta and return it to the pot. Pour the sauce, ricotta and mozzarella over the hot pasta and stir until well blended. Pour mixture into an oiled 9×13 baking dish. Sprinkle that reserved mozzarella over the top of the pasta mixture. If you enjoy a crunchy topping on your baked pasta like I do, crush a couple handfuls of buttery crackers over the top and dot with butter before putting it in the oven. Bake meal for 25-30 min.
